    I always peel it and cut up a half hand of root ginger into matchsticks size. I boil it in water for at least 5 mins to extract its goodness into the water. Just leaving it in water is fairly useless as it's a very fibrous root. Then i pour it into Pyrex jug and squeeze half a lemon into it. Dilute to taste. I make several batches from that amount of ginger root. over 24 hours. I'm fit, healthy happy over 60 and no medications, pains or illness.
